We are bringing back the old school butcher shop with our meat counter. No matter what you’re looking for—double thick cut pork chop, a dry aged ribeye, deboned whole chicken, or a fresh ham—our in-house butcher will be able to provide it. Do you have a question on the best way to cook your ten-pound rib roast for your family get together? Our butcher will be able to give you the know-how to impress your whole family with your perfectly cooked grass-fed roast.
In addition to our cut-to-order meat program, we will also be offering a selection of fine fresh sausages that are ground and cased in-house, ranging in flavors from sage breakfast sausage to spicy Spanish chorizo.
Whatever your meat needs are, be it shopping for Tuesday night dinner or planning a special holiday family event, you’ll find it at our meat counter.

Cole is a ten-year veteran of the local and sustainable meat industry. After getting his feet wet in a local food co-op in Burlington, Vermont, Cole ventured back home to the Princeton, NJ area to expand his knowledge of butchering at two other local meat operations. In the last five years, Cole has developed a strong skill set in humane slaughter and whole carcass butchery with a passion for gourmet sausage production and creating eclectic flavors to catch the eyes of his customers.
