I got to meet Alice Waters! We got our picture taken together, AND I told her all about my farm! In the world of local, organic farm food, this is like getting a personal moment with your rock star idol.
I learned about Alice Waters in nutrition school. As part of the Institute for Integrative Nutrition program, we were assigned to read about her groundbreaking restaurant, Chez Panisse, in what was then her latest book, “The Art of Simple Food.”
In the introduction to this book, I read: “When you have the best and tastiest ingredients, you can cook very simply and the food will be extraordinary because it tastes like what it is… Food tastes naturally delicious when it has been grown with care, harvested at the right moment, and brought to us immediately direct from the producer.”
This pretty much sums up the idea of the local food movement. Why should we struggle to add flavor to foods made of ingredients that are not fresh, that may have been on a truck for days, that may be packaged with all kinds of preservatives that are not suitable for human consumption and that detract from the taste and healthfulness of your meal?
In 2008, when I was a student at the Institute for Integrative Nutrition, Paul and I began to formulate our hopes and dreams, our plans and intentions for Profeta Farms. Now, just as these dreams are really coming to fruition, Alice Waters comes to speak in New Jersey as part of the distinguished lecture series at William Paterson University, and I get the opportunity to meet her in person, and tell her about our farm! The stars are aligning for us…
As I looked through this beloved book, in preparation to write this article, I realized that the primary goals and intentions of Profeta Farms were all laid out by Alice Waters. Knowing where your food comes from and how it was grown, eating seasonally, supporting the local growers who are taking good care of the soil and land… it’s all there. Ten years later, we are living the dream!
